Jigoku-mushi

In Kannawa, there are 'Jigoku-gama' (Hell ovens) that have been traditionally used for cooking, utilizing the steam (hell) that gushes from various places in the area. The cooking method that originated from using these steam ovens is known as 'Jigoku-mushi Ryori' or 'Hell-steamed dishes. This cooking method involves steaming ingredients entirely with the steam from the hell vents, sealing in the flavors and creating a richer taste. Please give it a try.

Sekisaba and Sekiaji

In the Bungo Strait, where the masses of the Seto Inland Sea and the Pacific Ocean collide, fishermen engage in life-risking single-hook fishing to catch 'Masaba' (Spanish mackerel) and 'Maaji' (Horse Mackerel), commonly known as 'Sekisaba' and 'Sekiaji.' Their flavors and textures stand apart from ordinary mackerel and horse mackerel! Sekisaba delights with a crunchy texture and a taste of high-quality, non-fishy fat that is uncharacteristic of regular mackerel.
Sekiaji offers a delightful combination of sweetness in texture and richness in taste.

For children in elementary school and younger, we provide special dishes just for them. Even though it's a children's menu, we don't cut any corners! Along with classic favorites like hamburgers and shrimp fry that kids love, we also incorporate local specialties such as 'Jigoku-mushi' dishes and 'Jigoku-mushi Pudding.' For breakfast, we focus on nutritional balance and volume, presenting a colorful array.
